Observation:
1) The waste pipes under the sinks in the fruit cutting area are leaking. Pooling water is a slipping hazard, and it will attract pests.
2) Areas of the floor in the fruit cutting area are worn and exposing raw concrete, and an uneven surface. Raw concrete will absorb food and water, thus attracting pests. The uneven surface will accumulate food and water debris.
Corrective Action(s):
1) Call a plumber and repair/replace the leaking waste pipes so they no longer leak. Clean all accumulated debris on the waste pipes.

2) Repair and reseal the damaged areas of the floor, so the floor is level, durable, smooth, sealed and cleanable.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -12C or colder; thermometers present; and temperature recorded daily.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All food stored 6" off the floor on shelves, pallets, or racks; in groups with raw protein separate or below RTE foods; and away from non-food items (pet foods, cleaners, stationary, etc.).
- No expired foods for sale or in use. Stocked rotated and FIFO rules followed.
- General sanitation level is good. No signs of pests.
- Quats sanitizer in spray bottles were 200ppm.
- 3-comp. sinks present for warewashing.
