Follow-up inspection conducted:

-Various food items stored at room temperature for lunch rush kept to minimum amount. OK. Ensure to discard any leftovers after 2 hours. Do not place back in cooler.
-Chickens being cooked at this time. Cooked chickens to be cooled on a counter and used for the lunch rush. Staff had advised chickens are cooked before lunch and dinner shift and used up during each shift. Ensure to store 1/2 amount of cooked chickens on counter (must be used within 2 hours or discard) for each rush and the rest in cooler for proper cooling.

As previously been discussed/agreed, no dishwashing to occur in the morning or just before the dinner shift, when food prep is taking place.

Ensure to follow proper food handling practices as discussed. Otherwise, facility will be required to install an additional equipment, such as prep sink, prep counter and/or prep cooler in future.

Correction Order issued on March 5 still in effect and will be rescinded if in compliance during the next routine inspection.
