302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Sanitizing pail measured 0 ppm chlorine residual. Operator's employee stated that it was last replenished on Friday.
Corrective Action(s): Sanitizing pail was re-formulated with 200 ppm chlorine residual. You must change up your sanitizing pail every 4 hours to ensure there is adequate chlorine residual to sanitize food contact surfaces, such as tables and cutting boards.

This is a similar violation to the last routine. In the last routine, no staff members were observed using the sanitizing pail at any period during the inspection, and dirty cloths were left lying around the kitchen. Further infractions will result in further enforcement, including issuance of correction orders or violation tickets.

Observation (CORRECTED DURING INSPECTION): Paper towel dispenser in kitchen area lacked paper towels.
Corrective Action(s): Paper towels were added inside dispenser. You must have paper towels at all times to properly dry your hands after hand washing.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Multiple infractions:
1) Gulab jamun in containers were observed directly on the floor.
2) Many items uncovered in the walk-in cooler, including raw chicken and raw fish.
3) Raw chicken in walk-in cooler observed above cooked chicken, and directly next to cooked rice
4) Dry goods, including garlic powder, were lying around the kitchen without lids after use.
5) Chickpea bucket on the floor, observed next to the dishwasher.
Corrective Action(s): 1) Lids were placed on all items that did not contain lids at time of inspection. Raw fish and raw chicken were covered with a tight-fitted lid.
2) Gulab jamun was placed off of the floor. NEVER place food products directly on the floor, as it is an unsanitary practice.
3) Chickpea bucket was moved away from the dishwasher and off the floor. DO NOT PLACE FOOD PRODUCTS NEAR THE DISHPIT.

Comments

Routine inspection conducted. Facility could use more attention to cleaning and sanitation, especially behind the cook line. The following observations were made:

1. Temperatures
- Walk-in cooler at 3C
- Front display cooler at approximately 4C
- Chest freezer (in kitchen) at -22C
- Chest freezer (in walk-in cooler) at -10C
- Beverage cooler at 3C
- Thermometers present inside cooling units
- WARNING: Temperature AND dishwasher logs were not maintained since December 31, 2018. You must CONTINUE conducting temperature and dishwasher logs on a ROUTINE basis to ensure that your equipment is working properly!

2. Hygiene and Sanitizing
- Hand wash station stocked with hot/cold running water and liquid soap, Paper towels were stocked upon request of the EHO (see violation code 401 aboev)
- Low-temperature dishwasher sanitizes at a final rinse cycle of 50 ppm. Test strips were available for use
- Ventilation canopy is in acceptable sanitary condition, but is due for cleaning soon
- Washroom is in good sanitary condition and hand sink stocked with hot/cold running water, liquid soap, single-use paper towels

3. Storage
- Food storage practices are not satisfactory - numerous items on the floor, raw food stored above cooked food - these issues must be addressed before the follow-up inspection
- Dough, recently prepared, was sitting on the dough mixer to be processed. Reminder: Do not leave dough at room temperature for over 2 hours. If dough is left out for more than 2 hours, it should be discarded

4. Pests
- No recent signs of pest activity at time of inspection
- Professional pest control company arrives on a routine basis
- Last inspection report from pest control company was from February 11, 2019 as per invoice shown to EHO during inspection. Report indicates that 5 traps were serviced during the inspection
- Mechanical trap checked during the inspection (near the dishpit) did not contain any signs of rodents

5. Administrative
- Permit posted and up-to-date
- Manager has FoodSafe 1, which expires in May 2019. Ensure that you renew FoodSafe before it expires at www.foodsafe.ca

Specific comments: Items audited during the inspection did not contain any trans fat at time of inspection. Canola oil (Sunfrie) is typically used as a base for sweets - audit showed no trans fats during the inspection.
