Comments

Routine inspection conducted. Premise is generally well maintained and operated, and is well-lit. The following observations were made:

1. Temperatures
- Stand-up freezers all at -18C or lower
- Ice cream cake freezer at -18C
- Prep freezer at front-of-house varies from -14C to -18C
- Walk-in freezer at -18C
- Chest freezer for fries at approximately -13 to -18C
- Walk-in cooler at 4C
- Display ice cream cake freezers in customer area at -18C
- Chicken strips and beef patties hot-held at approximately 60C
- Cream mixture inside soft ice cream dispensing machine at 4C
- Sandwich and burger prep coolers at 4C (Reminder: Keep the top compartment closed at all times when not in use)
- Temperature logs maintained for hot-holders. Ensure that you also maintain logs for coolers and freezers daily

2. Hygiene and Sanitizing
- Hand wash stations (kitchen + restrooms) adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Commercial-grade degreaser machine was recently purchased to remove grease from ventilation slats. Instructions state to drain and refill once every 3 months. Slats are placed inside the degreaser once a week
- Ventilation slats in excellent sanitary condition
- Quaternary ammonium compound (quats) sanitizing pail in kitchen at 200 ppm, quats spray bottle at 200 ppm in front-of-house, and quats is dispensed directly at 200 ppm
- Test strips available for checking sanitizer concentrations. As stated in previous routine inspection, please ensure that you check your sanitizer daily to ensure that it is working properly
- Knives and cutting boards generally maintained in good sanitary condition

3. Storage
- Food items are stored at least 6" off the floor
- Food items are generally covered when not in use with original containers or saran wrap
- Storage of food items satisfactory, no raw products observed around cooked / ready-to-eat items

4. Pest Control
- Back door is tightly shut when not in use
- No visible pest entranceways or harbourage sites identified at time of inspection
- No visible signs of recent pest activity (e.g. rodent droppings, gnaw markings) observed at time of inspection

5. Administrative
- Permit posted. Reminder: Display it in an easily visible location to the public
- Employee up front has FoodSafe 1 taken two weeks ago

6. Recommendations
- Do not use cardboard on the floor, as it is not cleanable

The following requires further attention:
- Due to the number of coolers and freezers in this establishment, all cooling and hot-holding units should be recorded. Sanitizer logs should be made daily based on the result from your test strip. The next inspection will check that these record keeping measures are being conducted.
