Temperature of reach-in deli units were noted at 4°C or less.
Temperature log is available and up-to-date.
QUAT sanitizer was noted at 200 ppm as per a test strip.
Three compartment sink is used for manual dishwashing.
Clean-in-place (CIP) equipment such as deli slicers are cleaned and sanitized in adequate frequency. Cleaning/sanitizing logs are documented and available for review. Cleaning method reviewed with the staff - satisfactory.
No issues noted with storage practice.
No evidence of recent pest activity at the time of inspection. Routine pest control is in place.
