-General sanitation of sushi prep/service and storage areas was satisfactory
-Handsink supplied with hot/cold water, liquid soap & paper towel. Noted frequent handwashing by staff. Gloves worn while handling food
-Refrigerated storage temperatures were adequate:
-Line cooler 3 deg. C
-Display cooler 1 deg. C
-Walk-in cooler 3 deg. C
-Frozen storage temperatures were adequate. Product maintained in a frozen state.
-True freezer -12 deg. C
-Walk-in freezer (where product stored) -18 deg. C
-pH of sushi rice was 4.2. Staff demonstrated testing at time of inspection.
-Quats sanitizer solution present/in use. Concentration measured 200 ppm.
-Temp records, pH readings & Quats readings up to date.
-Dishwashing facilities shared with Prepared Foods. Sanitizing temp of dishwasher was adequate. Final rinse at dish surface was 77 deg. C
-Staff member on duty holds valid Foodsafe Level 1 certificate.
