Observation (CORRECTED DURING INSPECTION): Cooked chickens stored in one of the warmers had surface temperatures ranging in between 49-54'C. Temperature setting was adjusted for the unit. All chickens taken out to be reheated and this time.
Corrective Action(s): Ensure all hot potentially hazardous foods are stored at 60'C or above at all times.

Routine inspection conducted:

- Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below required temperature of 4'C; Freezers at/below required temperature of -18'C.
- Hot-holding units operating above 60'C, except mentioned above.
- Temperature records kept up to date.
- Low temperature dishwasher achieved the minimum required level of 50ppm chlorine at the plate level after final rinse.
- 200ppm Quats available in buckets and labelled spray bottles throughout.
- Ventilation canopy hood serviced and maintained.
- General food storage practice satisfactory.
- Traps in place. No evidence of pest activity observed at this time.
- Professional pest control company contracted for regular visits. Recent reports checked.
- Washroom handsinks satisfactory. Front handwash station for customer satisfactory.

General maintenance and sanitation of the facility satisfactory. However, floors underneath large equipment require more frequent cleaning.
