Temperature logs are maintained - cooler, hot holding, dishwasher & cooling of whole chickens.
Sanitizer prepared - Ensure it is maintained at 100ppm Cl
Dishwasher tested at 180F
Hand washing sinks are properly equipped
All temperatures meet health requirements
Limited food items left out during busy periods
Vessel in use for egg foo yung is washed after every use
Bar area maintained
General cleanliness & organization has been maintained

Work on food storage in coolers - ensure lids are tightly secured on each bin. Lid should not be balancing on top of pile of food as this does not protect the food from potential contamination
Lid for ice machine has yet to be replaced
