304 - Premises not free of pests [s. 26(a)]
Observation: Dead cockroaches were observed inside two traps below a cooler across from the dishwasher.
Corrective Action(s): Staff removed the glue boards with dead cockroaches and replaced them with new glue boards. Continue with pest control measures to eliminate cockroaches:
-Professional pest control program to apply appropriate treatment to eliminate the cockroaches and re-service traps.
-Regular cleaning below and between all kitchen equipment, cook line, and storage areas to reduce and prevent possible food and water sources (breeding grounds) for cockroaches.
-Sealing all possible entry points.
-Keeping food, preparation utensils, and service utensils protected from contamination. Cover reusable plates overnight in food grade materials. Store all dry goods in pest proof containers with tight fitting lids between use.
-Sanitizing all preparation surfaces prior to and after each use.
-Ensuring all soiled service utensils in the dishwashing area are cleaned and sanitized by the end of the night.
-Emptying garbage every night.

Observation: A hole was observed in the wall of the second dry storage room. Metal screen opening to the outside environment may be a possible entry point in the room with the hot water tank.
Corrective Action(s): Seal potential entry points to protect the food premises from the entrance of pests; Correct within 1 week and provide an update to the Environmental Health Officer. Keep the door closed between the room containing the hot water tank and kitchen in the interim.

Follow up inspection:
-Pest control service was conducted on March 7, 2023 based on the pest control report by Ansika Pest Control.
-Pest control report indicated the following: no rodent activity and some cockroach activity. Greenway ant and "Roach bait gel" (PCP No. 30375, 15 gm) was applied.
-Pest control program is in place at least twice per month according to staff. Another pest control service is scheduled for this weekend according to staff.
-Dry food ingredients in both dry storage rooms were covered between use.
-High temperature dishwasher was at or above 71 degrees C (measured at 78 degrees C) at the plate level.
-All reusable service utensils had been cleaned and sanitized through the dishwasher upon re-servicing the dishwasher on March 1, 2023 according to staff.
-Floor below the cook line had been cleaned to remove majority of the accumulating grease. Ensure to clean between and behind the equipment to remove the grease build-up.
-Ventilation hood panels had been cleaned.
