209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Mashed potatoes in covered containers were stored next to the covered raw chicken on a shelving unit inside the walk-in-cooler.
Corrective Action(s): Raw chicken was re-located to a separate shelving unit to protect the mashed potatoes from any potential contamination. Ensure raw chicken is stored either on a completely separate shelving unit or on lower shelving units below potential ready-to-eat food.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Only one sink plug was available on-site and it was not functional.
Corrective Action(s): Ensure at least two adequately sized sink plugs are available for the 2-compartment sink; Correct within 1 month. General Manager informed that two sink plugs are on order.

Comments

Back Kitchen:
-Handsink was supplied with liquid soap, hot and cold running water, and single-use paper towels.
-2-compartment sink was supplied with hot and cold running water. Overhead sprayer was functional.
-Overhead sprayer over one compartment sink was operational.
-Dishwasher final rinse chlorine sanitizer residual was at least 50 ppm (measured at 100 ppm) at the plate level.
Note: Both chlorine test strips had an expiration date of 02/2022 on the bottles. General Manager ordered new chlorine test strips during the inspection.
-Walk-in-cooler, upright cooler, prep. cooler, and refrigerated cooler drawers were at or below 4 degrees C.
-Walk-in-freezer temperature was satisfactory.
-Under-the-counter freezer was at or below -18 degrees C.
-Hot-held food (e.g. chicken, cooked rice, and mashed potatoes) were at or above 60 degrees C.
-Temperature record log was maintained and up-to-date.
-Frozen food is thawed inside the walk-in-cooler
-Food storage areas were in a clean condition.
-200 ppm QUATS sanitizer was available inside three sanitizer pails.
-Ice machine was not in use for ice production.
-No signs of recent pest activity were evident at the time of inspection.
-Pest control program was in place on a biweekly basis according to the General Manager.
-Most recent pest control report dated January 14, 2023 was available.
-General Manager had valid FOODSAFE Level 1 course training (expiration date: September 26, 2027).

Front service area:
-Handsink in the front service area near the serving station was supplied with liquid soap, hot and cold running water, and single-use paper towels.
-200 ppm QUATS sanitizer was available.
-Bar cooler (containing bottled drinks only) and beverage cooler containing cheese cake in take-out containers were at or below 4 degrees C.
-The beer dispensing equipment is not used according to the General Manager.
-Handsink available for customer use near the sauce dispensing bottles was properly supplied.
