Observation: The current FSP doesn't have procedures for the basting sauces at the grill.
Corrective Action(s): Update your FSP to include procedure for monitoring basting sauces at the grill. Sauces must be discarded after 4 hours. A timer or time stamp must be used to monitor this process.

Observation: Both Altoshams are not working as they should. They cannot maintain temperatures above 60 degC even when the temperature dial is turned up to 10 (highest setting).
Corrective Action(s): Fix/replace them both.

On Follow-Up:
Baseboard under the sink has been replaced.

Outstanding Items:
Altoshams are not able to maintain chicken temperatures above 60 degC. The right one has a broken temperature dial so cannot be turned on, which means the temperature throughout the unit will not be maintained. The left altosham's temperature gauge is at its highest setting of 10 for both the top and bottom drawer and the temperature of the whole chickens are barely over 60 degC. The temperature of the chicken legs on the top drawer was around 55 degC and they were made over 2 hours ago. Discard chicken legs. The altoshams are not working as they should. Get them fixed if you can or replace both units.
The pressure of the hot water at the 2-compartment sink and the back hand sink is really low. Operator has ordered the part required but it'll take a week to receive. Ensure that the issue has been addressed by July 7th.
Replace the batteries at the hand sink in the unisex bathroom.
Time stamp the sauces used for basing chicken at the grill.
Update your FSP to include procedures for the basting sauces at the grill.
