Observation (CORRECTED DURING INSPECTION): A plastic bin containing several bags of cornmeal was observed on the lower shelf of a prep table. Cornmeal bags had what appeared to be rodent chew marks, and cornmeal along with other debris has spilled into the bin. Note: It was stated that the cornmeal was not being used.
Corrective Action(s): Discarded. Ensure all food is protected from potential contamination at all times and, if food becomes contaminated, ensure that it is discarded immediately

Observation: 1. Visible gap observed under double door located near ice machine area.
2. Pooling water observed in cracks on floor.
3. Old equipment stored on site (not in use).
Corrective Action(s): 1. Ensure visible gap is eliminated to exclude potential pest entry (e.g. install door sweep). Date to be corrected by: October 5, 2022.
2. Ensure pooling water on the floor is promptly mopped. Pooling water is a potential pest attractant. Date to be corrected by: Today.
3. Ensure equipment that is not required for business use is removed from the premises as this may potentially create harbourage areas for pests. Date to be corrected by: October 5, 2022.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Rodent droppings observed on floor in two hard-to-reach areas: (1) On floor under oven (behind old equipment), and (2) on floor to the right of fryer. Note: Pest control company is contracted and no other droppings observed at time of inspection. Utensil and dry food storage areas not observed to be affected.
2. General cleaning required for janitor room, equipment storage areas, and cook line.
Corrective Action(s): 1. Ensure affected areas are properly cleaned and sanitized. Date to be corrected by: Today.
2. Ensure above-noted areas are properly cleaned. Food and other debris may potentially attract pest activity. Date to be corrected by: October 5, 2022.

Observation: 1. Quats dispenser is not capable of dispensing quats at 200 ppm at time of inspection. Solution appears to be coming out at full strength.
2. No cold water available at two-compartment ware washing sink.
3. Cracks / holes observed in floor in main kitchen area (e.g. around drain).
Corrective Action(s): 1. Ensure quats dispenser is serviced so that it is capable of dispensing quats at 200 ppm. Date to be corrected by: September 28, 2022.
2. Ensure cold water is available at above-noted two-compartment sink: Date to be corrected by: September 28, 2022.
3. Ensure cracks / holes noted above are properly sealed to provide a smooth, non-absorbent, non-slip surface and prevent the accumulation of liquid / water. Date to be corrected by: October 12, 2022.

Routine health inspection conducted.
- Coolers at 4 degrees C or less.
Note: Small counter top cooler requires defrost due to ice build up.
- Freezers at -18 degrees C or less.
- No hot holding at time of inspection.
- Probe thermometers available on site for internal food temperature checks.
- Hot and cold running water, liquid soap, and paper towels in place for hand washing.
- Dry food storage areas in clean condition. Food is stored in pest-proof containers with lids.
- High temperature dishwasher achieved 71 degrees C at the utensil surface during the final rinse (minimum required: 71 degrees C).
Note: Concession not in operation at time of inspection. Ensure sanitizer is prepared fresh at the correct concentration prior to reopening. Both bleach and quaternary ammonium compounds (concentrate) on site. Verify concentrations with appropriate test strips.
