Observation: - Mice droppings observed on shelves under front counter, back room by mop sink. Clean these using bleach/water solution.

Observation: - The front door has a large gap under it which will allow pest entry into the Cafe. Seal the gap. Check gaps under "rolling door" on the side as well.

Observation: - After 2 runs, the dishwasher rinse temperature was 66C at plate level. It must reach at least 71C at plate level (82C@manifold). Also, dishwasher isn't draining properly. Get the unit fixed. Until it's fixed, sanitize the dishes in 200ppm bleach solution in the 2-compartment sink for 2 minutes after washing, then air dry (200ppm bleach sol = 1 oz per ga water).
