Observation (CORRECTED DURING INSPECTION): Garlic and tartar sauce were probed at 13 C and discarded. All other non-potentially hazardous foods were moved to another cooler.

Observation: Droppings found in the following areas:
-Underneath equipment, tables and shelves.
-On the ledge at the far end of the kitchen.
-On several containers.
Corrective Action(s): Clean all droppings today and contract the services of a professional pest control company and provide the report. Ensure that any entry points found by pest control are sealed. Follow up on Friday.

Observation: Cleaning needed throughout the kitchen, including but not limited to:
-The ceiling tiles.
-The flooring, especially underneath shelving and equipment.
-The shelving.

Observation: a) Left hand prep cooler had an ambient temperature of 13 C.
b) Two of the battery operated paper towel dispensers were not working properly.
Corrective Action(s): a) Do not use until it has been repaired. Follow up inspection on Friday.
b) Correct by Friday.

The walk in cooler and middle line cooler were < 4 C.
The walk-in freezer was < -18 C.
