Observation (CORRECTED DURING INSPECTION): At the time of inspection bleach sanitizer solutuion concentration well over 200ppm.
Corrective Action(s): Ensure during operation a 100ppm bleach sanitizer solution is prepared and available for use. Store all wiping cloths in this solution when not in use. General sanitizer solution formula: 1 oz of regular unscented bleach to 1 gallon of water.

Corrective Action(s): Ensure all food is protected from contamination at all times. Store scoops and other dispensing outside of dry products. Dry products to be stored in food grade containers with tight fitting lids. Correct by August 27, 2021.

Observation: Several freezer in premise keeping frozen potentially hazardous foods above -18 degrees C. Domestic freezer -14 degrees C, small freezer -12 degrees C, chest freezer -16 degrees C, 2 door freezer by hand sink -12 degrees C, and back area upright freezer at -12 degrees C.
Corrective Action(s): Ensure all frozen potentially hazardous foods are stored at or below -18 degrees C. Adjust temperature to a colder setting and defrost freezers if required. Correct by September 1, 2021.
