Observation (CORRECTED DURING INSPECTION): Dried food debris observed under guard and on back side of deli slicer.
Corrective Action(s): Equipment was disassembled then washed, rinsed, and sanitized during inspection. Ensure this is done properly after each use, and ensure all staff who clean and sanitize the noted equipment are aware of the procedures for properly disassembly, cleaning and sanitizing.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Chlorine (bleach water) sanitizer measured at greater than 200 ppm chlorine in all three spray bottles labeled as sanitizer.
Corrective Action(s): Sanitizer was discarded. Sanitizer was remade and tested at 200 ppm chlorine. Ensure sanitizer is always available at the correct concentration for safe and effective sanitizing of food contact surfaces (for example, 100 to 200 ppm chlorine).

Note: Quats sanitizer was previously used, however, operator has switched to chorine sanitizer due to inability to obtain quats sanitizer at this time. No concerns with change, provided that sanitizer is used properly and maintained at the correct concentration. Manual warewashing poster with instructions for preparation of sanitizer is available for reference.

Observation: Leak observed from valve at potable water supply line located below the two-compartment sink.
Corrective Action(s): Have piping / valve serviced or replaced to stop the leak. Date to be corrected by: November 29, 2022.
Note: A bin is currently located under leak to catch water. Ensure bin is emptied on a regular basis to prevent potential overflow until issue has been properly addressed.

Routine health inspection conducted.
- Walk-in cooler at 1 degree C.
- Preparation cooler at 3 degrees C (below) and 4 degrees C (above).
- Front cooler at 3 degrees C.
- Freezer at -22 degrees C.
- Food is covered and properly organized.
- Hot and cold running water, liquid soap, and paper towels are in place for hand washing (2-comp sink, hand sink).
- Low temperature dishwasher measured 50 ppm chlorine in the rinse residual at the utensil surface.
- Equipment and utensils is sanitary condition, with one noted exception. See violations.
- Discussed: Operator to obtain appropriate test strips (chlorine) to monitor dishwasher sanitizer levels. Test strip vial on site is empty.
