Observation (CORRECTED DURING INSPECTION): Found numerous food items (tempura, and chicken) sitting at room temperature cooling for 2 hours, temperatures were 19 C to 24 C.
Corrective Action(s): Must cool foods to room temperature in 2 hours then place in cooler to cool to 4 C in 4 hours.
Move all food to cooler immediately that has been cooling for 2 hrs or less. Any foods cooling for longer than 2 hours must be discarded.

Observation (CORRECTED DURING INSPECTION): 1. Found bean sprouts sitting in a bag in a container at room temperature
2. Found prawns sitting double stacked on ice at room temperature
3. Found pre cooked chicken, prawn and vegetable tempera sitting on counter waiting to be re-cooked.

Corrective Action(s): 1. Must keep bean sprouts on ice or in the cooler at all times.
2. When using ice to keep food cool, food must be kept directly on ice (do not double stack) or submerged in ice.
3. Keep all foods in the cooler until ready to cook or re-cook, do not leave at room temperature.

Observation (CORRECTED DURING INSPECTION): 1. Found spray bottle to have >200 ppm chlorine.
2. Ice machine a small build up of algea in the upper compartment.
Corrective Action(s): 1. Dilute spray bottle to 100 - 200ppm chlorine. 1/2 tsp bleach per litre water.
Use test strips to confirm concentration.
2. Clean and sanitize the ice machine to removal all algea and mold.
