Observation: The front entrance door and the back door of the premises was propped open at time of the inspection. Flies and mice could enter the premises and infest it.
Corrective Action(s): Immediately close the front and back door, and keep them closed at all times to keep out pests. If you would like to prop the doors open, install screen doors on the doors.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
1) The corrugated, plastic being used to cover dough in pizza pans is not an acceptable material. It is not food grade and it is not able to be cleaned properly (can't clean inside the corrugated holes). Food could become contaminated with chemicals or pathogens.
2) There is aluminum foil that is covering the wall at the pizza cutting station. The foil is changed every 2-3 weeks. Foil is only made to be used once; is not cleanable; and it will attract pests with the accumulated food on it.
Corrective Action(s): 1) Discard all the corrugated, plastic covers and replace them with food grade, sealed, durable, and cleanable covers. Consult a food equipment supply company for such covers.

2) Remove the aluminum foil at the end of the day, clean the wall beneath and install new aluminum foil at the beginning of the day. This must be done every day. A premanent solution is highly recommended, such as installing FRP, plexiglass or stainless steel on the wall.

Comments

A routine inspection was completed, the following observations were made:
- Coolers 4C or colder; freezers -23C; and thermometers present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer present, [Cl2] was 200ppm.
- All foods stored in food grade containers; covered; dated coded; foods stored in groups; and foods stored 6" off the floor on shelves and racks.
- No expired foods in use or for sale. FIFO rules being followed.
- FoodSafe certified staff present.
- General sanitation level is good. No signs of pests.
- 3-compartment sink present for warewashing. Soap and bleach present for warewashing.
- Take-out and single-use utensils only.
