Observation:
1.) Meat derbis was observed on the meat slicer.
2.) Filth accumulation was observed in both ice machine at the back of house.
Correction:
1.) Disassemble meat slicer and clean and sanitize (Correted during inspection)
2.) Turn off the ice machine, empty all ice out, and clean and sanitize areas with filth accumulation.(Date to be corrected: May 4th, 2023)

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation:
1.) Dried up meat derbis was observed on the meat slicer.
2.) No iodine detected from the rinse water in the glasswasher at the bar station.
3.) 2 QUAT sanitizer spray bottle had no detectable QUATs (0 ppm) in front of house and back of house.
Correction:
1.) Disassemble and clean and sanitize the meat slicer. (Corrected during the inspection)
2.) Replenish sanitizer spray bottles with fresh QUATs. (Corrected during the inspection)
3.) Wash all glasswares in the low-temperature dishwasher until the glasswashers repaired (Date to be corrected: May 4th, 2023)
Comments

Items corrected:
1.) Meat debris on the meat slicer was removed. Mear slicer was cleaned and sanitized.
2.) Ice machine was in good sanitary condition.
3.) Storage area was cleaned and equipment and other items were organized. All items were stores above the ground; filth accumulation under the two upright 2-door freezers was removed and cleaned.
4.) Glass washer at the bar station was repaired and 25 ppm of iodine was detected at the glass surface and test strip was available on site.
** Note: Ensure to monitor iodine concentration at least twice day.
5.) QUAT dispenser at the 2-compartment sink measured 200 ppm.

6.) Liquid soap dispenser in the handsink at the right side of the bar station was repaired. Liquid hand soap was available for usage.

Thing to be corrected:
> Mouse droppings were still oobserved at the corner of the room in the storage area outside the restaurant.

CORRECTIVE ACTION
Clean and sanitize droppings by using a bleach solution (1:10 dilution = 1/2 cup of bleach w/ 4 cups of water)
