Observation: Some food in the refrigerator units still noted stored uncovered at the time of inspection. E.g. Cooked rice and beef stored in the walk-in cooler uncovered.
Corrective Action(s): All food intended for overnight or prolong storage in all refrigerator and freezer units must be stored covered and protected with plastic wrap or lid. This avoids potential cross-contamination of food and protect it from any other foreign materials contaminating the food products when in storage.

Follow-up inspection conducted for inspection report# KLAI-CDUPFJ and KLAI-CDWRBT
Did not see any large pails of food products being incorrectly cooled during the inspection.
Meat slicer was used this morning and cleaning has not been started on this equipment. Please ensure the meat slicer is properly dissemble, wash, rinse and sanitize all parts before putting away for tonight or used again (if last used more than 4 hours).
All hanging clean utensils were stored clean at the time of inspection. No dirty utensils noted.
Dishwashing racks noted in a sanitary condition. 2 appeared to be a little soiled, staff removed the 2 soiled racks during the inspection.
Breads are being stored in food-grade bags. Did not observe garbage bags being used to store food at the time of inspection.
Cleanliness of the facility has greatly improved.
Underside of the shelvings in the walk-in cooler are a lot more cleaner. Some carbon/ black buildup still noted but overall improvement noted.
Wall below the 2 microwaves by the walk-in cooler was noted in a sanitary condition.
Cleaning observed on the wall behind the 2 Garland ovens. Heavy carbon buildup still noted but overall improvement noted.
Overall cleanliness of the fume hood noted. Some cleaning still needed above the Garland ovens area but again, overall improvement noted.
Floor in the kitchen and server areas noted in a sanitary condition.
Ceiling by the vents above the prep area handwash station noted in a sanitary condition.
New lining observed in the bar reach-in cooler. Noted in a sanitary condition at the time of inspection.

Overall, tremendous improvements noted in the facility. Thank you for being diligent in fixing the violations noted during the routine inspection. Please keep up the good work to maintain the kitchen in a sanitary and food safe conditions at all time. No further follow-up required at this time.
