Observation:
The low temperature dishwasher rinse cycle had [Cl2] of 0ppm. Rinse cycle require to sanitize and kill germs with a minimum of [Cl2] 0f 50ppm.
Corrective Action(s):
Immediately call a company to repair the dishwasher so the rinse cycle has [Cl2] between 50-100ppm. Purchase chlorine test strips so staff can test/monitor the [Cl2] each morning. Manually spray sanitize dishes using Quats sanitizer, once it has gone through the dishwasher. Allow to sit for 2 minutes, then run dishes through the dishwasher again to remove the Quats sanitizer. A follow-up inspection will occur in 1 week, failure to fix the dishwasher will result in closure of the facility.

Comments

A routine inspection was conducted, the following observations were made:
- Cooler 4C; freezers -17C or colder; and thermometers present in each unit.
- Quats sanitizer in spray bottles was 200ppm.
- Hand sink stocked with liquid soap paper towels, and running hot and cold water.
- All foods stored in food grade containers; stored in groups; store 6" off the floor on shelves, racks or platforms; labeled; date coded; and covered.
- General sanitation level is good. No signs of pests.
- If staff want to keep the back door open, a screen door must be installed to exclude pests. Until this is installed, the back door MUST remain closed at all times.
- Peel off all the white, plastic protective cover on prep tables and freezers. This material is not cleanable, but the stainless steel surface underneath is.
- Facility is organized and uncluttered.

**A follow-up inspection will be conducted on Oct. 22/18 to ensure the dishwasher has been fixed and can sanitize dishes. Failure to have this fixed will result in the issuance of orders, fines and/or closure.**
