Observation (CORRECTED DURING INSPECTION): Edges of metal flashing along walls and shelveing units not sealed.
Corrective Action(s): Seal all edges of metal flashing to prevent harborage sites for pests. This shall be completed before re-opening the restaurant. Operator started sealing the remaining unsealed edges of metal flashing at time of inspection.

Comments

Premise has been serviced by a licensed pest control company for the treatment of cockroaches. Operator has retained the services of the same licensed pest control company to service the premise (re: rodent and cockroach control) for a period of 12 months starting September 12, 2017, with a frequency of service at once per month. Copies of service report and contract provided - see paper file.

Dishware and food utensils have been cleaned.
Shelves are no longer lined with cardboard.
Most of the old wooden shelves have been replaced with new wire shelving.
Organization of storage areas has improved and there is less clutter.
Area around dumpsters has been cleaned up.
New metal flashing installed in various areas of the kitchen to seal/cover gaps and crevices. Operator has applied silicone sealent along most edges of the metal flashing to further eliminate harborage areas for pests.

General sanitation of the kitchen area has improved. However, area under the deep fryer still needs further cleaning to remove all grease and food debris. The wall shelf to the right of the wok station needs to be cleaned to remove all grease, food debris and spilled sauces. The bottles containing condiments and dry food ingredients need to be cleaned as well. The remainder of the cleaning shall be completed before the restaurant is re-opened.

Closure order rescinded. Permission to re-open for business granted subject to completing the outstanding violations noted in this report.
