Potentially hazardous foods on display is hot or cold held then discarded and replenished every hour.
Foods being hot held for service between 60.2C to 60.3C Unit #1 sausage, #2 eggs, #3 french toast, #4 roasted tomatoes, #5 hashbrowns.
Cold held foods are suspended in ice, smoked salmon, boiled eggs and fruits.
All fridge coolers at 4C or below.
