304 - Premises not free of pests [s. 26(a)]
Observation: Mice droppings observed in dry storage room. A mouse observed on a glue trap in the room. Cake boxes are strewn all over the floor. The room isn't as organized as it could be. The storage room next to it is cluttered with items all over the place. As per staff, a pest control company is on contract.
Corrective Action(s): Keep service reports from the pest control company on-site.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The room next to the dry storage room is full of items not used for the business. One of the booths is being used as an "office". Boxes of products are being stored by the front door!
Corrective Action(s): Remove everything from the 2nd room and discard anything not needed for the business. Provide shelving and organize the room better so that you can store all you food products in this room. Get this done by next Friday. (You may want to look at knocking down the wall to make a larger dry storage room).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: The dishwasher isn't hooked up to the detergent. Staff is manually adding the detergent to the dishes.
Corrective Action(s): For dishwashing, you need to have the detergent hooked up to the dishwasher so that it dispenses automatically.

LAB TESTING REQUIRED FOR ORIGINAL CREAM, PB/JAM CREAM AND COFFEE CREAM USED IN BUNS . SEND SAMPLES TO THE LAB AND GET IT TESTED FOR pH AND WATER ACTIVITY. EMAIL ME COPIES OF THE LAB RESULTS BY OCTOBER 25TH.
