306 - Food premises not maintained in a sanitary condition [s. 17(1)] Observation: Pizza oven requires cleaning due to food product build up. Used aluminum containiers observed on dry food shelving. Employee states these are to be recycled. Floor below shelving unit outside office area requires cleaning. Corrective Action(s): Place recycling in designated container so that it is clear they are to be recycled. Violation Score: 9 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: Freezer unit at -6c. Freezer may be on a defrost cycle. Check unit in 1 hour to verify the temperature has dropped to -18c. Exhaust canopy sticker states it the last cleaning was done in June 2020. Pizza cooler compressor unit observed with dust build up on cooling fins. Seals on pizza prep cooler observed to be damaged allowing cool air to escape. Corrective Action(s): Have exhaust canopy serviced Remove dust from cooling fins. Replace damaged seals Violation Score: 15
