Observation:
Food stains and dust accumulation found on hard to reach areas (walls behind equipment, tables, and shelves) and equipment (legs and undersides of sinks).
Corrective Action(s):
Detailed cleaning of hard to reach areas, and all surfaces between the floor and 4 feet above the floor require to be done on a regular schedule.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The hot water tap supplying the spray arm (3-comp. sink) is constantly leaking. This is a water source for pests.
2) A plastic spatula was damaged and peeling. Bits of the plastic could fall into food and contaminate it.
Corrective Action(s):
1) Repair or replace the hot water tap so it doesn't leak. The Manager is aware of the leaking tap and has organized repairs for it already.
2) Discard the plastic spatula immediately and inspect all equipment and utensils on a regular schedule to replace damaged or broken items. During the inspection, the Manager threw away the spatula.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -20C or colder; hot holding units above 60C; thermometers present; and temperatures recorded daily.
- Quats sanitizer in cloth buckets was 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation is satisfactory. Improvement needed in the mentioned areas.
- No signs of pests. Door guard installed on the base of the back door.
- Dipper well is in working condition. Constantly, running cold water found in the dipper well and scoops stored in them.
- FoodSafe certified staff present.
- Foods stored in food grade containers; covered; date coded; labeled; in groups with raw proteins below RTE foods; and 6" off the floor on shelves.
- Utensils used to handle foods; staff use disposable gloves correctly (discarded after completing a task).
- No expired foods in use.
