- 100ppm chlorine residual detected in the sanitizer bucket
- High temp dishwasher reached >71C at plate's surface
- Hot holding (black sauce) measured 60C
- Temperatures of refrigeration units are adequate (<4C coolers, <-18C freezers)
- Temperature log is in use
- FOODSAFE trained staff (3) present
- General sanitation is good
- No signs of pest activity observed at the time of inspection



ATTENTION:
* Remove duct tape along the edge of the cooler & hot holding unit as this is not an approved food contact surface and cannot be cleaned & sanitized adequately.
* Ensure that all scoops used for dry ingredients are stored vertically, not allowing the handle to touch foods. Scoops shall be washed in the dishwasher daily.
* Generally foods are stored in adequately, but some meats in the walk-in freezer were stored on top shelf. Ensure that all meats and eggs are stored on the bottom shelves.
* No dishwashing allowed in the sink in the front area. This sink shall be used for washing hands only. Dumping drinks are allowed, but do not dump foods in the sink as it can be easily clogged.
