Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1) One piece of ice from the ice machine was observed to have black debris on it. Other pieces of ice did not appear to have black debirs. 2) An apron was left on top of the cutting board that was used to cut raw chicken (many pieces of raw chicken were still on the cutting board).
Correction: 1) Clean the ice machine properly to ensure the lines are clean and ice produced will be free of debris. 2) Always clean and sanitize the cutting board after use, especially after handling raw chicken. If staff is busy, at last place the cutting board in dishpit and never place aprons on top of the used cutting board when staffs will be wearing it again. Directed staff to clean and sanitize the cutting boards.

Ice machine has been professionally cleaned, invoice provided and ice appears to be free of debris.
General sanitation is satisfactory, please pay attention to between equipment area.
Dishwasher specs received and in confirmation with supplier.
New thermometer has been ordered.
