Observation (CORRECTED DURING INSPECTION): * Wiping rags were found on counters in unsanitary condition. Sanitizer was just being set up although food prep had already begun. Wiping rags are to be kept in sanitizer between use.
Corrective Action(s): * Ensure wiping rags are kept in sanitizer between use and not on counters. Also, ensure sanitizer available in each work station prior to beginning food preparations

Observation: * Some single use containers found on shelving that were not being maintained in sanitary condition. Containers and dishware must be kept in sanitary condition and protected from contamination
Corrective Action(s): * Remove all single use containers that are not in sanitary condition and reorganize storage areas for single use containers and dishware. Rewash all dishware on top shelf across from cooking area as these were not in sanitary condition

Observation: * Some build up of debris/grime found in main front kitchen that requires immediate attention and more regular detailed cleaning

* Glass washer final rinse was 50 ppm chlorine residual at plate surface internally (met minimum requirements)
* Dishwasher final rinse was 74'C/165'F or hotter internally at plate surface
* Food was covered in storage areas
* Monitoring records were available and up to date overall. Ensure glass washer sanitizer check done daily and documented on monitoring sheets
* Staff were appropriately dressed with uniforms and hair protection
* Cold-holding units were 4'C/40'F or colder
* Freezer units were -18'C or colder. Walk-in freezer unit had ice build up on the compressor, and needs to be addressed
* Hot-holding units were 60'C/140'F or hotter
* Some build up of debris/grime found in main front kitchen areas under equipment, etc., that requires immediate and daily attention
* Sanitizer solutions should be set up at beginning of day prior to beginning food prep and wiping rags stored in sanitizer between use
* Follow up inspection to be done:
