Observation: Mildew / biofilm observed on interior surfaces of ice machine. In addtion, ice scoop was stored in a container with a damp paper towel lining the bottom; paper towel discoloured with what appeared to be mildew.
Corrective Action(s): 1. Ice scoop and container placed into dishwashing area to be washed and sanitized, paper towel discarded.
2. Discard ice. Ensure that all surfaces are properly washed, rinsed, and sanitized, then allowed to completely air dry. Date to be corrected by: Today.

Observation (CORRECTED DURING INSPECTION): No surface sanitizer readily available for use at time of inspection (e.g. bucket with wiping cloths and/or spray bottle(s))
Corrective Action(s): Sanitizer was dispensed from the dispenser into buckets and was measured at 200 ppm quats. Ensure that at all times during business operations, sanitizer is available for use (front and back areas) at a concentration required for effective sanitizing of food contact surfaces (e.g. 200 ppm quats). Change sanitizer as often as needed to maintain effective concentrations.

Observation (CORRECTED DURING INSPECTION): Back area hand sink access was blocked by a cart. In addition, hose was attached to faucet (note: backflow prevention device in place).
Corrective Action(s): Cart removed, hose detached. Ensure that all hand sinks are easily accessible and properly supplied at all times to facilitate proper hand washing.

Observation (CORRECTED DURING INSPECTION): 1. Opened canned foods observed to be stored in orginal can. Signs of potential corrosion observed inside pineapple can.
2. Food items not covered (e.g. open bag of rice in dry storage).
Corrective Action(s): 1. Discarded. Ensure that once cans are opened, food is immediately transferred to another suitable food grade container if food is to be stored. Do not store food in cans as the interior of the can may potentially corrode after cans are opened.
2. Ensure that all food items are properly covered / sealed to protect from potential contamination.

Observation: Food debris and/or grease observed in the following areas:
1. Dishwashing area, including storage racks and floor.
2. Interior surfaces and seals of coolers, especially glass door cooler and sandwich cooler.
3. Floors and shelving located in kitchen area and dry storage.
Corrective Action(s): Ensure above-noted areas are thoroughly cleaned to remove all debris / grease, and are properly sanitized. Note: Equipment parts observed to be stored directly on ground under shelving in dishwashing area. Do not store items directly on the ground to allow for effective cleaning of these areas. Date to be corrected by: March 7, 2022.

Observation: Black under counter cooler measured at 7 to 8 degrees C at time of inspection. Internal food temperatures checked. Note: Mostly non-potentially hazardous or low risk items stored in cooler (e.g. whole or cut vegetables, packaged tofu).
Corrective Action(s): Food items including cut vegetables and tofu moved to another cooler at 4 degrees C or less. Ensure that cooler is serviced or adjusted in order to maintain food at 4 degrees C or less. Date to be corrected by: Today.

Observation (CORRECTED DURING INSPECTION): Spray bottle located in dining area that was labeled as sanitizer contained no detectable sanitizer. It was stated that spray bottle contained degreaser, not sanitizer. One spray bottle located under sink in front area was unlabeled.
Corrective Action(s): Spray bottle was re-labeled as degreaser. Contents discarded from other spray bottle. Ensure that all chemicals such as cleaners and sanitizers are properly labeled to identify contents to avoid accidental misuse and potential contamination of surfaces / food.

Observation: No thermometers observed in front area coolers.
Corrective Action(s): Ensure all cold holding units are equipped with thermometers accurate to 1 degree C in order to monitor unit temperatures. Date to be corrected by: March 7, 2022. Note: Calibrated, sanitized, probe thermometer to be used for checking internal food temperatures.

High temperature dishwasher measured 72 degrees C at the utensil surface (required: minimum 71 degrees C at utensil surface).
Sanitizer dispensing unit at 2-compartment sink is dispensing at 200 ppm quats.
No signs of pest activity observed.
