Observation (CORRECTED DURING INSPECTION):
- Bags of beef products was thawed in the 1st sink of the 3-compartment sink. The water in the sink was hot.
- Products were still solid frozen.
Corrective Action(s): - Educate food operators to thaw food under cold running water.

Observation: - Small flies observed in the mop sink area, beside the dish pit, and dry storage area.
Corrective Action(s): - Clean the aformentioned area, discard the unused items, keep the facility a sanitary condition.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
- Mold growth in the dishwashing area, along the sink, on the wall behind the dishwasher.
- The pipe by the dishwasher was leaking.
- 2 garbage bags of recycles stocked in the mop sink area, mop sitting in bucket with wastewater. Significant amount of small flies observed in the mop area.
- Grease built up on the vent hood and the filter. Next cleaning date is Aptil 2023.

Corrective Action(s): - Clean mold in the dish pit area with hot soapy water and then bleach, re-caulk the sink.
- Repair the pipe.
- Remove recycled items in the mop sink area, empty the mop bucket, hang the mop for air dry after cleaning.
- The vent hood needs to be cleaned every 3 months in the future. Clean the filters of the vent.

Observation: - Greasy plastic buckets stacked about 1.8 meters tall by the dishwashing area.
- Piles of cardboard boxes stocked in the same area.
- Small flies observed in this area.

Comments

Routine inspection conducted with the presence of the owner.

- General sanitation needs to be improved. See code.
- Hand wash stations fully equipped with hot & cold running water, liquid hand soap and paper towels.
- Walk-in cooler: 3.9C, bubble tea cooler at or below 4C. Prep cooler (right). 2.1C. Prep cooler (left): 4.2C.
- Walk-in freezer: -18C.
- Hot holding for rice and noodle were at 60C or above.
- Low-temp dishwasher was at 200ppm at final rinse at dish level(bleach).
- 3-compartment sink was supplied with hot and cold running water and drain plugs available.
- 100 ppm chlorine sanitizer was available in a bucket with a wiping cloth and a labelled spray bottle in the kitchen area and in the bubble tea/front service area.
- Ice machine was in a clean condition and the scoop was stored separately.
- Dry storage area was in a clean condition at the time of inspection.
- Meat Slicer was in a clean condition and no food debris observed.
- No mouse droppings observed at time of inspection, however, small flies active in mop sink area and the storage area. See Code.

Note: (1) keep the kitchen organized and free of clutters.
(2) Frequently use bleach sanitizer on the counter and any other food contact surfaces.
(3) Organize the walk in cooler/freezer, separate chicken / beef / lamb on the shelving units.
