Observation (CORRECTED DURING INSPECTION): Tomato garden soup was observed to be hot held at 56C. Operator reports soup was made at 2.5 hours ago and it will only be served until 4 pm (3.5 hours from cooking). Operator increased the temperature to high heat setting and reported any left over soup will be discarded at 4pm.

Observation (CORRECTED DURING INSPECTION): Sanitizer spray bottle and sanitizer pail had 0 ppm chlorine at the time of inspection. Operator restocked sanitizer spray bottle and pail with 200 ppm chlorine.
Corrective Action(s): Use 1/3 cap full of the bleach container cap for adequate chlorine concentration in each sanitizer spray bottle.
