A follow-up inspection was completed:
- Low temperature dishwasher had [Cl2] of 0ppm during the rinse cycle. Staff were not manually sanitizing in separate sink.
- The owner indicated that the service company came in and primed the pump, at which time, sanitizer was injecting into the rinse cycle.
- Test strips present, but it appears staff not using them every day to ensure [Cl2] is correct.
ACTION TO BE TAKEN
1) Immediately start manually sanitizing dishes, once they have been through the dishwasher, by soaking them in a bleach & water solution at 200ppm strength. Use your test strips to ensure the concentration is correct.
2) Call a repair person to service the dishwasher, and ensure the rinse cycle has a [Cl2] between 50-100ppm at ALL times.
- A follow-up inspection to occur, failure to fix the dishwasher will result in the issuance of a correction order, tickets, fines and/or closure of the premises. |
