302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): Dishwasher chlorine residual at 0 ppm. Several checks earlier in day recorded at 50 ppm. Observed chlorine in line, but with many air breaks. Corrective Action(s): Replaced chlorine drum and re-tested. OK. Investigate feed line from source to dispensing and correct issues as needed (blockage/kinks etc.) Violation Score: 15

Comments

Temperatures - Cooling units less than 4 C; Freezers -21 C. New freezer, cooler and cold shipping/receiving planned. Currently in process of renovations in east side of facility. OK. Please submit a floor plan of changes to this office for records purposes (email ok); Dish/tray washing station is poorly lit and the concrete floor is etched to the point where it is no longer smooth and easily cleanable. Develop a long-term plan to update and improve this station. This will be reviewed during next scheduled inspection. Handwash stations OK. Washroom handwashing ok.
