Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous food - Egg sandwich probed at 8 degrees Celsius in the upper unit of display sandwich cooler. Minimum ambient temperature measured at 6.4 degrees Celsius. Bottom unit is fully functional.
Corrective Action(s): Operator stated the sandwich was made this morning. All cold potentially hazardous foods were moved to 2-door cooler in the kitchen that was fully functional. Operator adjusted the temperature gauge of the sandwich cooler at the time of inspection. Sandwiches can be moved back to the sandwich cooler once its ambient temperature reaches 4 degrees Celsius or below. Ensure all coolers are able to maintain cold potentially hazardous foods at 4 degrees Celsius or below.

Observation (CORRECTED DURING INSPECTION): No sanitizer available on site.
Corrective Action(s): Ensure to have a bucket designated for bleach sanitizer solution and store wiping cloths. Add 1 cap full of bleach to 4L water. Use sanitizer solution to wipe food contact surfaces. Ensure sanitizer is made during the start of the shift and is used frequently throughout the day. Replenish with fresh sanitizer solution when the solution becomes dirty/cloudy. Fresh bleach sanitizer was prepared at the time of inspection.

Dishwasher reached 71C at plate level during final rinse cycle.
All cooling units (except display sandwich cooler) were at 4 degrees Celsius or below.
All freezer units measured at the range of -10 to -19 degrees Celsius.
Dipper well is functional.
Ice scoopers are clean.
No signs of pest activity at the time of inspection.

Follow up inspection to be conducted to confirm all the non-compliance items have been addressed & fixed.
