Observation (CORRECTED DURING INSPECTION): Hollandaise sauce stored in hot water bath measured with an internal temperature of 56C. 60C or above is required to properly hot hold potentially hazardous food.
Corrective Action(s): Operator discarded the aforementioned Hollandaise sauce and increased the water bath temperature to above 60C.

Observation (CORRECTED DURING INSPECTION): Quat spray bottle at the main kitchen prep area measured with a concentration of less than 50 ppm. 200-400 ppm is required to properly sanitize food contact surfaces.
Corrective Action(s): Discard and refill the aforementioned spray bottle with 200 ppm quat solution. Clean and sanitize food contact surfaces at the main kitchen prep area.

2. Food storage inserts not covered while stored in the sandwich cooler.
Corrective Action(s): 1. Metal can should not be used to store food after opening to prevent leeching of metals. Transfer the milk to a food grade container.
2. Ensure all food inserts are covered with a physical barrier when not in use.

-2 compartment sink available for manual dishwashing. Sink plugs available.

-No pest activities observed at the time.
