Routine inspection conducted today: Handwash stations accessible, equipped with hot and cold running water, liquid soap and paper towel. All refrigerator units were at 4C or below. Frozen food was noted thawing in the walk-in cooler. All freezer units were at -18C or below. All food was stored in the proper storage hierarchy, stored protected and off the floor. Hot hold unit was noted holding food over 60C. Sink & Surface Cleaner Sanitizer noted in use. 272 PPM noted in the sanitizer containers. 700 PPM noted on the wall mounted dispenser - excellent. High temperature dish machine was able to reach 74.3C at the plate level during the rinse cycle. No signs of pest activities noted during the inspection. General sanitation and organization excellent.
