205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): A container of cooked potatoes sitting in soy sauce was sitting on the counter at room temperature (was 20C). Bacteria will be able to grow in the food at room temperature and may cause people to become ill. Staff explained that the container of cooked potatoes sitting in soy sauce is made fresh every morning and stored at room temperature for the whole day. Any left overs are placed in the fridge and reheated to room temperature for service next day.
Corrective Action(s): Immediately discard the container of cooked potatoes sitting in soy sauce. There are 3 safe ways to store this dish:
i) Store in the fridge. When ordered, place in microwave to warm to room temperature and serve.
ii) Store in a hot holding unit.
iii) Store a small amount of the dish on the counter (at room temperature), and the remainder in the fridge. When 2 hours have passed, throw away the food on the counter and bring out a fresh amount. Write the time the dish requires to be thrown away.
During the inspection, staff discarded the container of food.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): The front waitress hand washing sink had water jugs in the sink basin. Staff are unable and/or not encouraged to wash their hands as the sink basin is blocked. There is another sink in the waitress area that staff use to rinse and fill water jugs.
Corrective Action(s): Immediately remove the water jugs from the sink basin and ONLY use this sink for hand washing. During the inspection, staff removed water jugs from the sink basin. Staff are able to wash their hands now.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: There is food debris on the floor under sinks, equipment, prep tables, and shelving racks; around the legs of equipment, tables, equipment & shelving racks; and along the base of walls behind shelving racks and equipment in the kitchen. This will attract pests.
Corrective Action(s): Detailed cleaning of these areas shall be done. Remove everything off the floor and move equipment, tables and shelveing racks away from walls to clean the floor beneath and behind them. Increase the frequency this is done (at least weekly).

Observation: Cardboard lining lower shelves and under cooking equipment has accumulated grease on it. Staff indicate this is changed every 2nd day. The grease soaked cardboard will attract pests. This violation was mentioned in the previous routine inspection.
Corrective Action(s): Cardboard must be changed/thrown away at the end of EVERY day, and new cardboard replaced with it. Retrain staff to do this every night. If cardboard is found, NOT to be changed every night, it will NOT be allowed to be used at all.

310 - Single use containers & utensils are used more than once [s. 20]
Observation (CORRECTED DURING INSPECTION): Observed staff wearing disposable gloves and rinsing them under water as they become dirty or when they change tasks. This is incorrect as disposable gloves MUST be thrown away when they become dirty and/or when changing tasks as they can NOT be washed adequately. This violation was mentioned in the previous routine inspection.
Corrective Action(s): Immediately have staff change their gloves and educate staff on their proper use. Disposable gloves shall only be used until they become dirty and shall only be used to complete one task. Staff shall throw the gloves away, wash their hands, and put a new pair of gloves on when the staff complete one task and start a new one and when the gloves become dirty. Failure to follow these rules will result in the premises NOT being allowed to use disposable gloves at all.

Observation: Walls in the waitress areas have peeling paint, dents and exposed dry wall. The walls are no longer sealed or cleanable, this will attract pests.
Corrective Action(s): Repair the walls so they are durable, level, smooth, sealed and cleanable. Fill in all dents and holes so the wall is level. Sand the wall so it is smooth. Paint the wall so it is sealled and cleanable.

Comments

A routine inspection was completed, the following observation was made:
- Coolers 4C or colder; freezers -18C or colder; hot holding units above 60C, and thermometers present.
- Low temp dishwasher had a [Cl2] of 50ppm.
- Sanitizer in spray bottles and cloth buckets had [Cl2] of 200ppm.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; covered; foods stored in groups with raw proteins separate from other foods; and all foods stored 6" off the floor.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. Improvement needed in the mentioned areas.
- No signs of pests.
- FoodSafe certified staff present.
- Health permit fees paid and a valid decal found on the posted health permit
