Premises well maintained. Temperature controls good: cooling units less than 4 C; Freezers less than -18 C; Hot holding above 60 C. Sanitizing all good (watch for the spray bottles and that they are changed regularly) Quats dispensing at 200 ppm - dishwasher above 78 C at plate.
