Observation: Debris noted on the floor below the dish machine, floor of the dirty sink area of the dish machine, floor below the microwaves and coil of the dish sink sprayer.
Corrective Action(s): Clean and sanitize the abovementioned areas and maintain in a sanitary condition at all time.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): One of the clear containers in the cleaned dishware area was noted with cracks/ damage that go all the way through.
Corrective Action(s): Container was discarded by staff at the time of inspection. Do not used any utensils/ equipment that is in poor repair where pieces could potentially come off and become a physical hazard to food.

Routine inspection conducted today:
Handwash stations, including washrooms, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at 4.0C or below.
Upright freezer was at -22C.
Hot hold units were holding food above 60C.
All food stored protected.
QUAT sanitizer spray bottle available. 400 PPM QUAT detected.
Low temperature dish machine noted with 50 PPM chlorine residual.
No improper dispensers used or stored within bulk food containers.

Broken floor tiles were noted during the last routine inspection by the deep fryers. As per the operator, the tiles have been on back order and he will be getting them installed sometimes this week. To be evaluated during the follow-up.
