Comments

Handsink was supplied with liquid soap, hot and cold running water, and paper towels.
100-200 ppm chlorine sanitizer was available. *The operator mentioned that they would obtain test strips to check the concentration of the chlorine sanitizer (bleach water).
Coolers were 4 degrees C or less.
Freezers were -18 degrees C or less.
The knives were stored in a clean container.
