General:
Premises maintained in a sanitary manner
All hand wash stations are fully equipped with liquid soap, paper towels and hot and cold running water.

Temperatures:
All cooler units achieve 4C or less.
All freezer units achieve satisfactory temperatures.
Ensure temperature logs are used.

Sanitation:
3 compartment sink set up appropriately with a QUAT sanitizer. Achieves 200ppm.
Prep sink adequately used.
Bleach sanitizer in bucket achieves 100ppm.
chemical storage is good.

Dry Storage:
All scoops have handles.
Pest proof containers are used.
Food stored above the ground (above 6 inches).

Pest Management:
Pest company contracted biweekly.
