Corrective Action(s): Diluted at time of inspection and remeasured at 200 ppm chlorine. Ensure sanitizer is maintained at concentrations required for effective sanitizing of food contact surfaces (e.g. 100 to 200 ppm chlorine).

Routine inspection conducted:

- Upright cooler at 3 degrees C
- Preparation cooler at 3 degrees C (below) and 4 degrees C (above)
- Under counter cooler at 5 degrees C*
- Upright freezer at -23 degrees C
- Under counter freezer at -19 degrees C
- Hot holding internal food temperature at 60 degrees C or more
- Raw animal products were not observed to be stored above ready-to-eat products
- Equipment and utensils in sanitary condition.
- Proper thawing procedures observed to be in use.
- Hand washing sinks supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff observed to be properly washing hand at time of inspection.
- High temperature dishwasher measured 77 degrees C at the utensil surface during the final rinse (minimum 71 degrees C at utensil surface)
- No signs of pest activity observed at time of inspection
- Temperature records maintained. Reminder: Corrective action should be noted if temperatures fall outside of required temperature ranges.
