Observation (CORRECTED DURING INSPECTION): Surran wrap were placed on the food preparation surfaces for sushi. Surran wraps were being replaced daily. Surran wrapping the food preparation does not replace proper washing and sanitizing of the cutting board. Ensure the food preparation area is properly washed and sanitized at least every 2 hours.

Routine inspection conducted and the following were noted:
Sushi display case coolers were at 3C and equipped with thermometer.
Cold food display case cooler was less than 4C
Stand up coolers in the sushi section were at 4C.
Stand up freezer units at -18C.
Quats dispenser at 200ppm.
Hand washing station satisfactory.
No pest activity noted.
Food items stored at least 6 inches off the ground.
Renovation will be taking place in the sushi section in the up coming months. Proper enclosures are to be installed to prevent contamination of food products in different food sections throughout the store. If food items cannot be protected from contamination during the renovation process, proper closures of the different food sections must take place.
