Observation (CORRECTED DURING INSPECTION): Ambient air temperature measured 7.5 degrees C (the sandwich fridge) and sandwich was probed and interval temperature was 7.0 degrees C

Observation: Mouse droppings were observed in the following areas
1.) Under the point of sale shelf
2.) Shelf under the sanwich fridge; droppings were behind the bottled water.
3.) Shelf under the handsink in front of house (left side)
4.) Shelf under the coffee containers
5.) Shelf under the baking prep counter.

Clean and sanitize the areas noted above. Ensure to follow pest control company's recommendations regarding sanitation.

Observation: Sandwich fridge in front of house had an ambient temperature of 7.5 degrees C. Temperature records indicated elevated temperature (7 degrees C - 10 degrees C for numerous months. Do not store PHFs until the cooler is repaired.

> Spray bottle (QUATS) measured 200 ppm
> QUAT dispenser above the mop sink measured 200 ppm
> LOW temperature dishwasher has 100 ppm chlorine residue at the plate surface.
> Chemicals were properly stored.
> Cooler temperatures measured:
--> 2 door under the counter coolers in front of house measured 2 degrees C except the sandwich fridge (7.5 degrees C).
--> Display cooler measured 0 degrees C
--> 2 door under the counter cooler under the pastry speedrack at the back of house measured 3 degrees C
--> 1 door upright cooler (steel) in the storage room beside the washrooms measured 4 degrees C.
--> 2 door upright cooler (glass door) at the back of house measured 1 degrees C
> 1 door upright freezer at the back of house measured -21 degrees C
> Temperature log-sheet was available and in use.
> Pest control report was available. Last inspection was done on May 3rd 2023.
> General sanitation was satisfactory.
> FOODSAFE certified staff was available on-site during the inspection.
