Observation (CORRECTED DURING INSPECTION): 2 large buckets of fries in the walk-in cooler had an internal temperature of 39 deg. C
-Corrective action: please ensure all foods cooled from cooking are cooled to 20 deg. C within 2 hours before cold storage to bring down to 4 deg. C
-->Remove fries from cooler and place into wide, shallow pans to speed up the cooling process.

Observation (CORRECTED DURING INSPECTION): -Opened can in walk-in cooler covered with plastic wrap.
-Tray of onions in walk-in cooler not covered.
Corrective action: ensure all stored foods are protected from contamination.
-Opened cans are no longer food grade. Transfer leftovers into a food grade container.
-Cover tray of onions with a plastic cover or other method of protection.

Observation: Back storage room needs organizing. Utensils and other food equipment scattered on the floor under shelving units.
Corrective action: reorganize the storage room. Clutter on the floor creates conditions that may harbour pests and does not allow for easy cleaning.

-low temp dishwasher dispensing 50ppm chlorine at the plate.
-Spray bottles and sani buckets contained 200ppm QUATS.
-Wiping cloths stored inside sani buckets and submerged.
-Beverage prep cooler: 2 deg. C
-Handsinks stocked with warm water, liquid soap, paper towels.
-Ice machine maintained in sanitary condition.
-Good tawing practice of packaged frozen food observed.
-General sanitation satisfactory - monitor areas around cook line and dishpit.
-Overall storage of food in coolers/freezer satisfactory.
