Observation: Technician serviced prep cooler on Friday but cooler unit foods are still being probed at 6C. Facility has just opened and foods in the inserts were covered at the time of inspection.
Corrective Action(s): Technician will be back on site this afternoon to repair the cooler unit. Cooler unit must be able to maintain 4C or less on a consistent basis.

Comments

-Follow-up inspection to March 5, 2018.
-Cooler technician has been on-site. Operator stated technician serviced cooler unit and stated it was able to maintain 4C. Cooler technician will be on-site this afternoon to repair cooler unit. If cooler unit is unable to maintain 4C or less on a consistent basis, cooler unit cannot be used for the storage of potentially hazardous foods.
-Failure to ensure all equipment is in good working order will result in the issuance of Orders and/or violation tickets.
