Observation (CORRECTED DURING INSPECTION): Cooked shrimp tempura were stored in the hot holding unit measured with internal temperature of 35C. At least 60C is required to properly hot hold hot potentially hazardous food.
Corrective Action(s): Move the tempura into a functional cooler. Do not store tempura in the hot holding unit until it can maintain an ambient air temperature of 60C or above.
