Observation: Foods in middle line cooler top, farthest from the fan are reading between 7-8C. Middle cooler bottom closest to the fan is reading 2-3C.
Corrective Action(s): Operator to rearrange all food products to ensure all food in cooler is maintained at or below 4C.

Observation: Cooler at back closest to the back door is leaking, water is pooling on the floor. Food items are at or below 4C.

Comments

Hand sinks were adequately supplied with liquid soap and paper towels.
Washrooms were generally clean and well supplied with liquid soap and paper towels.
Food in warmers were maintained at 60C or higher.
Food in walk in coolers were maintained at 4C or lower.
All other prep coolers are maintaining food at 4C or cooler.
Freezers were maintained at or below -18C.
Main coolers were well organized.
Food items in walk in coolers were covered and protected from contamination.
Sanitizer in spray bottles and dispensers were 200ppm Quat. Please ensure sanitizer buckets are checked and changed as frequently as necessary to maintain 200ppm Quat.
Dishwasher tested at 200ppm Chlorine.
Glasswasher at bar tested at 12.5ppm Iodine.
Kitchen was well organized.
