Coolers (walk in and pizza prep) - both at 4C / 40 F or colder. Hot holding - not observed today. Hot holding equipment set at 165F - ok. Freezer - walk in and small freezer - good. Hand washing sinks in kitchen and staff washroom have hot/cold water, liquid soap, and paper towels in dispensers. Faucets working. Food Safe training - Manager available. Corporate food safety and sanitation plans. Test strips available for dishwasher sanitizer and quats sanitizer as per manager. Quats used for food contact surfaces and wiping cloths - dispensed at 100ppm - removed air bubble and 200ppm dispensed. Wiping cloth stored in 200ppm quat solution. Commercial dishwasher has a final chlorine sanitizing rinse - good. Cleaning satisfactory. Pest control - monitoring in place, pest control contract - see above. Report reviewed with Manager.
